The Vanilla Cream Caramels Recipe is sweet, soft and very creamy. These caramels melt in your mouth with each bite. The flavor is rich and smooth because of the cream and vanilla.

Ingredients
  

  • 1 cup heavy cream
  • 1 cup sugar
  • ½ cup butter
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions
 

Prepare the Dish

  • Line a small baking dish with parchment paper. Leave extra paper on the sides.

Heat Sugar and Syrup

  • Add sugar and corn syrup to a saucepan. Heat on medium until sugar begins melting.

Add Butter Slowly

  • Add butter slowly into the hot mixture. Stir gently until the butter melts completely.

Pour in Cream

  • Pour in heavy cream slowly. Stir the mixture to keep it smooth and creamy.

Cook Until Thick

  • Cook the mixture until it reaches 245°F. Stir often to avoid burning the sugar.

Add Vanilla

  • Turn off heat and add vanilla extract. Mix well for a rich vanilla flavor.

Pour Into Dish

  • Pour the hot caramel mixture into the lined dish. Spread evenly using a spatula.

Cool Completely

  • Let the caramel cool at room temperature. Do not touch it while it sets.

Cut Into Pieces

  • Lift the caramel using the parchment paper. Cut into small squares with a sharp knife.

Wrap the Caramels

  • Wrap each piece with parchment or wax paper. Store in a jar or box.

Notes

  • Use a candy thermometer for perfect texture.
  • Do not cook on very high heat. It burns easily.
  • Add a little sea salt on top for extra flavor.
  • Let the caramel cool fully before cutting.
  • Butter your knife so the caramel does not stick.
