Ingredients
  

  • Chicken pieces 2 pounds
  • Buttermilk 2 cups
  • All-purpose flour 2 cups
  • Cornstarch 2 tablespoons
  • Salt 2 teaspoons
  • Black pepper 1 teaspoon
  • Paprika 1 teaspoon
  • Garlic powder 1 teaspoon
  • Onion powder 1 teaspoon
  • Cayenne pepper ½ teaspoon
  • Vegetable oil for frying

Marinate the Chicken

  • Place chicken in a bowl. Pour buttermilk over it. Cover and rest in the fridge for two hours.

Prepare the Coating

  • Mix flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder and cayenne in a bowl.

Heat the Oil

  • Pour oil into a deep pan. Heat on medium until it reaches 350°F. Oil should be hot but not smoking.

Coat the Chicken

  • Remove chicken from buttermilk. Let extra drip off. Coat each piece well with the flour mix.

Rest the Coated Chicken

  • Place coated chicken on a tray. Rest for ten minutes. This helps the crust stick better.

Fry the Chicken

  • Carefully place chicken into hot oil. Fry in batches. Do not crowd the pan at all.

Turn for Even Cooking

  • Turn chicken after ten minutes. Fry until golden brown. Inside temperature should reach 165°F.

Drain and Rest

  • Remove chicken using tongs. Place on paper towels. Rest for five minutes before serving.
