Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 packs cream cheese 8 oz each, soft
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 ripe bananas sliced
  • 1/2 cup brown sugar
  • 2 tbsp butter for caramelizing
  • 1/4 cup dark rum
  • 1/4 cup heavy cream

Instructions
 

  • Preheat the oven to 325°F (163°C).
  • Mix cracker crumbs with melted butter.
  • Press the mix into the pan bottom.
  • Beat cream cheese in a bowl until smooth.
  • Add sugar and beat until creamy.
  • Add eggs one by one, mix slowly.
  • Stir in vanilla until combined.
  • Pour batter over crust in pan.
  • Bake for 55 minutes
  • Turn off the oven and leave cheesecake inside.
  • Let it cool before removing from the pan.
  • Melt butter in a saucepan and add brown sugar.
  • Stir until sugar melts and turns sticky.
  • Add banana slices and cook until golden.
  • Pour in rum and let it bubble.
  • Add cream and stir to make glaze.
  • Spoon bananas and glaze over cheesecake.
  • Chill for 2 hours before serving.

Notes

  • Use ripe bananas for a sweet taste.
  • Do not overmix the batter.
  • Bake in a water bath for a smooth cake.
  • Let it cool slowly to avoid cracks.
  • Chill before serving for the best texture.
