Ingredients
  

  • 3 cups cooked rice preferably cold
  • 1 cup cooked chicken diced
  • 2 eggs beaten
  • 1 cup mixed vegetables carrots, peas, corn
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon oil
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons green onions chopped

Instructions
 

Cook the eggs

  • Heat a little oil in a wok or pan. Add beaten eggs. Stir gently until cooked. Remove and set aside.

Cook the chicken

  • Add a bit more oil in the pan. Add diced chicken. Stir fry until heated and lightly golden on edges.

Cook the vegetables

  • Add chopped onion, carrots and peas. Stir fry until vegetables are soft but still slightly crisp for texture.

Add the rice

  • Add cold cooked rice to the pan. Break any clumps with a spatula. Stir well to mix with vegetables and chicken.

Add garlic and ginger

  • Add minced garlic and ginger to the pan. Stir for a minute. Do not burn. This gives classic fried rice aroma.

Add soy sauce and seasoning

  • Pour soy sauce over rice. Add salt and pepper to taste. Stir well. Mix evenly so rice is flavored thoroughly.

Add the eggs back

  • Add cooked eggs to the rice. Stir gently to combine with rice, chicken, and vegetables evenly for consistent flavor.

Finish with green onions

  • Add chopped green onions at the end. Stir lightly. Turn off heat. Serve hot immediately for best taste and texture.

Notes

  • Use cold rice for best texture
  • Break rice clumps before frying
  • Cook vegetables on high heat for color and crunch
  • Adjust soy sauce to taste
  • Stir continuously to avoid sticking
