Ingredients
  

  • Cornmeal – 1 cup
  • All-purpose flour – 1 cup
  • Baking powder – 1 tablespoon
  • Salt – ½ teaspoon
  • Sugar – 2 tablespoons
  • Eggs – 2 large
  • Milk – 1 cup
  • Melted butter – ½ cup
  • Cooked broccoli chopped – 1 cup
  • Cheddar cheese shredded – 1 ½ cups
  • Onion finely chopped – ½ cup

Instructions
 

Preheat the Oven

  • Preheat oven to 375°F. Grease your baking dish well and keep it ready.

Mix Dry Ingredients

  • In a bowl, mix cornmeal, flour, baking powder, salt and sugar evenly.

Mix Wet Ingredients

  • In another bowl, whisk eggs, milk and melted butter until smooth.

Combine Both Mixtures

  • Pour wet mixture into dry ingredients. Stir gently until just combined.

Add Broccoli

  • Add chopped broccoli to the batter. Mix lightly so it spreads evenly.

Add Cheese and Onion

  • Add shredded cheese and chopped onion. Stir gently until mixed.

Pour Batter

  • Pour batter into the prepared baking dish. Spread evenly with spatula.

Bake the Cornbread

  • Bake for 40 minutes until top is golden and center feels firm.

Cool Before Serving

  • Remove from oven. Let it cool for ten minutes before slicing.

Notes

  • Use fresh broccoli for better flavor.
  • Do not overmix the batter.
  • Sharp cheddar gives stronger taste.
  • Add jalapeños for mild heat.
  • Let it rest before cutting.
