Ingredients
  

  • 1 kg lamb shoulder cut into cubes
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme leaves
  • 200 ml red wine
  • 400 g chopped tomatoes canned or fresh
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 180°C (fan 160°C).
  • Heat olive oil in a frying pan. Brown lamb cubes in batches. Remove and set aside.
  • In the same pan, sauté onion and garlic until soft.
  • Add rosemary, thyme, paprika, and tomato paste. Cook 2 minutes.
  • Pour in red wine and simmer for 5 minutes.
  • Add chopped tomatoes and browned lamb. Stir well. Season with salt and pepper.
  • Transfer mixture to a casserole dish. Cover with lid or foil. Bake in the oven for 1 hour 30 minutes until lamb is tender.
  • Serve hot with mashed potatoes or roasted vegetables

Notes

  • Brown the lamb well for deeper flavor.
  • Use fresh herbs for the best taste.
  • Let the dish rest for 5–10 minutes before serving.
