lamb shoulder
cut into cubes

olive oil

onion
chopped

garlic cloves
minced

fresh rosemary
chopped

tsp
fresh thyme leaves

ml
red wine

chopped tomatoes
canned or fresh

tbsp
tomato paste

tsp
paprika
Salt and black pepper to taste
Instructions
Preheat oven to 180°C (fan 160°C).
Heat olive oil in a frying pan. Brown lamb cubes in batches. Remove and set aside.
In the same pan, sauté onion and garlic until soft.
Add rosemary, thyme, paprika, and tomato paste. Cook 2 minutes.
Pour in red wine and simmer for 5 minutes.
Add chopped tomatoes and browned lamb. Stir well. Season with salt and pepper.
Transfer mixture to a casserole dish. Cover with lid or foil. Bake in the oven for 1 hour 30 minutes until lamb is tender.
Serve hot with mashed potatoes or roasted vegetables
Notes
Brown the lamb well for deeper flavor.
Use fresh herbs for the best taste.
Let the dish rest for 5–10 minutes before serving.
