Ingredients
  

  • Lean minced beef – 500g
  • Onion finely chopped – 1
  • Garlic minced – 2 cloves
  • Carrots grated – 2
  • Courgette grated – 1
  • Chopped tomatoes – 400g
  • Tomato puree – 2 tablespoons
  • Mixed herbs – 1 teaspoon
  • Salt – 1 teaspoon
  • Black pepper – ½ teaspoon
  • Slimming World-friendly lasagne sheets – 9
  • Low-fat cottage cheese – 300g
  • Fat-free Greek yogurt – 200g
  • Grated reduced-fat cheese – 150g

Instructions
 

Cook the Veggies

  • Heat a pan and add the onion and garlic. Cook until soft and fragrant.

Add the Mince

  • Add the lean mince and cook until browned. Break it up with a spoon.

Add Carrots and Courgette

  • Stir in grated carrots and courgette. Cook for five minutes to soften.

Add Tomatoes and Herbs

  • Pour in chopped tomatoes and tomato puree. Add herbs, salt, and pepper.

Simmer the Sauce

  • Let the sauce simmer for 15 minutes. It should be thick and rich.

Make the Creamy Layer

  • Mix cottage cheese and Greek yogurt in a bowl. Stir until smooth.

Layer the Lasagne

  • Spread a thin sauce layer in the dish. Add sheets, sauce, and creamy layer.

Repeat the Layers

  • Repeat layers until the dish is full. Finish with a sauce layer on top.

Add Cheese

  • Sprinkle reduced-fat cheese on top. This makes a golden, bubbly crust.

Bake the Lasagne

  • Bake at 180°C (350°F) for 30 minutes. Let it rest for 10 minutes before serving.
