Ingredients
  

  • Cooked rice – 4 cups cold
  • Eggs – 3 large
  • Vegetable oil – 2 tablespoons
  • Garlic – 1 tablespoon minced
  • Onion – 1 small chopped
  • Carrots – ½ cup diced
  • Green peas – ½ cup
  • Soy sauce – 3 tablespoons
  • Sesame oil – 1 teaspoon
  • Green onions – 2 tablespoons chopped
  • Salt – ¼ teaspoon
  • Black pepper – ¼ teaspoon

Instructions
 

Prepare the Rice

  • Use cold cooked rice. Break all clumps with clean hands. This helps rice fry better.

Heat the Pan

  • Place a large pan on medium heat. Add vegetable oil. Let it heat for one minute.

Cook the Eggs

  • Crack eggs into the pan. Stir fast until softly scrambled. Remove eggs and set aside.

Sauté Vegetables

  • Add garlic and onion to the pan. Cook until soft and fragrant. Add carrots and peas.

Add the Rice

  • Put rice into the pan. Stir well with vegetables. Cook until rice feels hot.

Season the Rice

  • Pour soy sauce and sesame oil over rice. Sprinkle salt and black pepper. Mix evenly.

Add Eggs Back

  • Return scrambled eggs to the pan. Stir gently so eggs mix with rice.

Finish and Garnish

  • Cook for two more minutes. Turn off heat. Add green onions before serving.

Notes

  • Always use cold rice for best texture.
  • Do not overcrowd the pan while cooking.
  • Use high heat for better flavor.
  • Add cooked chicken or shrimp if desired.
  • Taste before serving and adjust seasoning.
