  • ½ cup cream cheese softened
  • ½ cup mayonnaise
  • 1 can 4 oz diced pimentos, drained
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 1 –2 teaspoons lemon juice optional, for tanginess

Instructions

Prepare the Ingredients

  • Drain the pimentos. Soften the cream cheese at room temperature. Measure all ingredients for easy mixing.

Mix the Cream Cheese and Mayo

  • In a medium bowl, combine cream cheese and mayonnaise. Stir until smooth and creamy without lumps.

Add Cheese and Spices

  • Add shredded cheddar cheese, garlic powder, smoked paprika, salt and black pepper. Mix gently until fully incorporated.

Add Pimentos

  • Fold in drained diced pimentos. Mix evenly so every bite has bits of pimento and cheese.

Adjust Flavor

  • Add lemon juice if desired. Taste the dip and adjust salt or pepper according to preference.

Chill the Dip

  • Cover the bowl with plastic wrap. Chill in the fridge for 15–20 minutes to blend flavors.

Serve the Dip

Notes

  • Use sharp cheddar cheese for stronger flavor.
  • Soften cream cheese fully for smoother texture.
  • Drain pimentos well to avoid watery dip.
  • Chill dip to enhance flavor before serving.
  • Blend in a food processor for ultra-creamy texture.
