  • 1 medium eggplant sliced thin
  • 1 zucchini sliced thin
  • 1 yellow squash sliced thin
  • 1 red bell pepper sliced thin
  • 1 yellow bell pepper sliced thin
  • 2 medium tomatoes sliced thin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 cloves garlic minced
  • 1/2 cup tomato sauce
  • Fresh basil leaves for garnish

Instructions
 

Preheat the Oven

  • Preheat your oven to 180°C (350°F). This ensures even cooking for the vegetables and brings out their natural flavors.

Prepare the Tomato Sauce

  • In a small saucepan, heat olive oil. Add minced garlic and cook for one minute. Stir in tomato sauce, salt, pepper and thyme. Simmer for 5 minutes.

Prepare the Vegetables

  • Slice eggplant, zucchini, yellow squash, bell peppers and tomatoes thinly. Try to make the slices even for uniform cooking.

Arrange the Vegetables

  • In a large baking dish, spread a layer of tomato sauce on the bottom. Arrange the vegetable slices in alternating colors for a beautiful pattern.

Season the Vegetables

  • Drizzle olive oil over the arranged vegetables. Sprinkle with salt, pepper and additional thyme for flavor.

Cover and Bake

  • Cover the dish with aluminum foil. Bake in the preheated oven for 30 minutes. This allows the vegetables to cook slowly and absorb flavors.

Remove Foil and Continue Baking

  • Remove the foil and bake for an additional 15 minutes. This helps the top layer of vegetables to roast slightly and enhances the flavor.

Garnish and Serve

  • Remove the ratatouille from the oven. Let it cool for 5 minutes. Garnish with fresh basil leaves for aroma and color before serving.
