- 1 zucchini sliced thin
- 1 yellow squash sliced thin
- 1 red bell pepper sliced thin
- 1 yellow bell pepper sliced thin
- 2 medium tomatoes sliced thin
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 cloves garlic minced
- 1/2 cup tomato sauce
- Fresh basil leaves for garnish
Prepare the Tomato Sauce
In a small saucepan, heat olive oil. Add minced garlic and cook for one minute. Stir in tomato sauce, salt, pepper and thyme. Simmer for 5 minutes.
