Ingredients
  

  • 1 lb 450 g cooked chicken, shredded
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 can 4 oz diced green chilies
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 2 tablespoons olive oil or butter
  • Optional toppings: avocado cilantro, sour cream, lime

Instructions
 

Cook the Onion and Garlic

  • Heat olive oil in pot. Add onion and garlic. Sauté until soft and fragrant.

Add Spices

  • Add cumin, chili powder, paprika, salt and pepper. Stir for 1 minute to release flavor.

Add Chicken and Broth

  • Add shredded chicken and chicken broth. Stir well to combine all ingredients.

Add Green Chilies

  • Add diced green chilies. Stir and let chili simmer for 10 minutes on low heat.

Add Cream

  • Slowly pour heavy cream into chili. Stir well and cook 5 more minutes.

Add Cheese

  • Add shredded cheese. Stir until melted and fully incorporated.

Adjust Seasoning

  • Taste chili. Add more salt or pepper if needed. Simmer 2 minutes more.

Serve Hot

  • Ladle chili into bowls. Add optional toppings like avocado or sour cream.

Notes

  • Use rotisserie chicken for quicker prep.
  • Simmer gently; don’t boil cream to avoid curdling.
  • Add more spices if you like it spicy.
  • Blend half the chili for creamier texture.
