Ingredients
  

For the cake:

  • 1 box yellow cake mix
  • 4 large eggs
  • 1 cup oil
  • 1 can 11 oz mandarin oranges with juice

For the topping:

  • 1 can 20 oz crushed pineapple (drained)
  • 1 box 3.4 oz instant vanilla pudding mix
  • 1 container 8 oz whipped topping (like Cool Whip)

Instructions
 

Prepare the Oven and Pan

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking pan.

Mix the Cake Batter

  • In a bowl, combine cake mix, eggs, oil, and mandarin oranges with their juice.
  • Beat until smooth and well mixed.

Bake the Cake

  • Pour batter into the baking pan.
  • Bake for 25–28 minutes or until a toothpick comes out clean.
  • Let the cake cool completely.

Make the Topping

  • In another bowl, mix drained pineapple, pudding mix, and whipped topping.
  • Stir until smooth and creamy.

Frost the Cake

  • Spread the pineapple topping over the cooled cake.
  • Chill in the fridge for at least 1 hour before serving.

Notes

  • Do not drain the mandarin oranges — their juice adds flavor and moisture.
  • Chill the cake before serving for best texture.
  • Add extra mandarin slices on top for decoration.
  • Use cold whipped topping so the frosting stays thick.
  • Add shredded coconut for a tropical twist.
