Ingredients

  • 3 large carrots chopped
  • 2 potatoes diced
  • 1 sweet potato peeled and diced
  • 1 onion chopped
  • 4 garlic cloves
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1 cup water

Instructions

Prepare the Veggies

  • Chop carrots, potatoes, sweet potatoes, and onions. Place them on a baking sheet so they roast evenly.

Add the Garlic

  • Add whole garlic cloves. Garlic will roast and become soft, giving warm and deep flavor.

Add the Olive Oil

  • Drizzle olive oil over the vegetables. This helps them roast well and gives a rich taste.

Add the Seasonings

  • Sprinkle salt, pepper, thyme, and paprika. Mix everything so each piece gets coated with seasoning.

Roast the Veggies

  • Place the baking sheet in the oven at 400°F. Roast for forty minutes until soft and golden brown.

Heat the Broth

  • Pour vegetable broth and water into a large pot. Warm on low heat to prepare for blending.

Add Roasted Veggies

  • Add the roasted vegetables to the pot. The warm broth helps blend flavors quickly and smoothly.

Blend Until Smooth

  • Use a blender or immersion blender. Blend everything until the soup becomes creamy and soft.

Adjust Thickness

  • If the soup is too thick, add more broth or water. Stir well to keep texture smooth and creamy.

Taste and Adjust

  • Taste the soup. Add more salt or pepper if needed to match your flavor preference exactly.

Simmer Gently

  • Simmer for five minutes. This helps all flavors blend and makes the soup warm and comforting.

Serve the Soup

  • Pour soup into bowls. Add a small swirl of cream or a sprinkle of herbs if you like.
