Ingredients
  

  • 1.5 lbs veal trimmed and cut into bite-sized pieces
  • 2 carrots peeled and sliced
  • 2 potatoes peeled and diced
  • 1 onion chopped
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/4 cup flour
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions
 

Step 1: Prepare the Veal:

  • Trim fat, cut, season, and lightly flour veal pieces.

Step 2: Brown the Veal:

  • Heat oil, brown veal in batches.

Step 3: Prepare Vegetables:

  • Sauté onions, carrots, celery, and garlic until soft.

Step 4: Combine Ingredients:

  • Add sautéed vegetables, potatoes, tomato paste, Worcestershire sauce, bay leaves and thyme to the slow cooker.

Step 5: Add Beef Broth:

  • Pour broth into a slow cooker, stir.

Step 6: Cook:

  • Cover, cook on low for 6-8 hours.

Step 7: Adjust Seasoning:

  • Taste, season if needed, remove bay leaves.

Step 8: Serve:

  • Ladle stew into bowls, garnish, serve with bread or rice.
